Another quick 15 minute noodle dish you can easily make using common pantry items! I used udon because I love thicc noodles but you can use your favorite noods. This dish is so simple, vegan and also a favorite for the kids, just leave out the chili flakes if you're making it for the little ones. Serves: 1 person Ingredients: 1 pack of frozen udon 2 chopped scallions 1 tbsp minced garlic 1 tbsp chili flakes (adjust to taste) 2 tbsp veggie oil 1/2 tsp brown sugar 2 tbsp soy sauce (adjust to taste) 1 tsp dark soy sauce julienne cucumbers Instructions: 1. On medium high heat, heat up 2 tbsp veggie or any neutral cooking oil then add in minced garlic, chili flakes and chopped scallions. Reserve some scallions for garnish. 2. Saute until fragrant, about 30-45 seconds should be enough. 3. Cook frozen udon per package instructions. 4. In a bowl, add udon, brown sugar, soy sauce, dark soy sauce and spicy garlic scallion oil. Mix well. 5. Garnish with some scallions and cucumbers! This time, we’re at Sanuki Udon Iwai a local favorite at Juju Station in Tokyo. It’s just a 5 minute walk from the station through the Jujo Ginza Shotengai. Udon Noodles are one of Japan’s most traditional foods as well as one of its most simple, just soup and udon noodles. Well, you can add toppings, but many Japanese still enjoy it just with those 2 ingredients. So it’s critical to craft a perfect dashi in order to craft a perfect bowl of udon. Iwai san learned his udon crafting skills under the master at Miyatake Udon in Kagawa Prefecture. He studied for about half year and then returned to Tokyo to open up his own shop. In fact, Kagawa Prefecture is known as the Udon prefecture in Japan as it ranks first nationwide for udon noodle production and consumption, with over 600 udon noodle shops which easily outnumbers their total number of convenience stores. And Iwai san, crafts their famous style Sanuki Udon Noodle at his local Tokyo shop. His shop uses a traditional Japanese method of kneading with your feet, which creates their udon’s signature elastic and chewy texture. Many Udon shops these days have moved to using machines for the kneading, but Iwai san prefers to carry on the Koshi method he learned from his master in Kagawa Japan. I am also showing a variation of Udon called Kamaage-Udon, where Udon is served in hot water with different condiments. It's easy & fun and you will be rewarded with delicious chewy homemade noodles that are far more superior than store-bought ones! PRINT RECIPE ▶ 🤍 INGREDIENTS 7 oz (200 g) all-purpose flour (plain flour) (1 ½ cup + 3 Tbsp; I encourage you to use the kitchen scale; If you use a measuring cup, follow this method: fluff your flour with a spoon, sprinkle it into your measuring cup, and use a knife to level it off. Otherwise, 1 cup of flour ends up with more than 120 g.) 6 Tbsp (90 ml) water 3 ½ tsp (10 g) kosher/sea salt (I use Diamond Crystal; use half for table salt) (different varieties of salt will vary in weight, so it's important to use a scale) potato starch/cornstarch (for rolling and dusting; if you're going to freeze udon noodles, you need to use potato starch/cornstarch as wheat flour tends to be absorbed by udon noodles and stick to each other) Udon Broth (*300 ml for 1 Serving) 2 ⅓ cups (560 ml) dashi (Japanese soup stock; click to learn more) (or 2 ⅓ cup water + 1 ½ tsp dashi powder) 1 ½ Tbsp soy sauce 1 Tbsp mirin 1 tsp sugar ⅛-¼ tsp kosher/sea salt (I use Diamond Crystal; use half for table salt) Optional: Quick Udon Broth (with Mentsuyu) ⅓ cup (80 ml) mentsuyu/tsuyu (noodle soup base) (I use a 1:7 ratio for water to mentsuyu. I use Kikkoman Koidashi Hontsuyu brand. I've done a lot of videos on different types of ramen, but I haven't paid much attention to the cousin of the ramen, Udon. The first place, Shin Udon, has incredibly fresh and chewy noodles, and if you get the cold udon, the dipping sauce has a great umami flavor to it. The tempura here is amazing as well, very tender, crunchy, and juicy. For the second place, I defiantly recommend Godaime Hanayama Udon. The Oni-Himokawa noodles at Hanayama Udon are unique. It's not the regular udon noodles you would typically get. It's a lot wider and flat.
