Make the sauce by combining together the soy sauces, toasted sesame oil, and hoisin sauce 5. Cook the noodles for 5min. Remember to stir occasionally to keep the noodles from sticking 6. Rinse and drain the noodles to get rid of the excess starch 7. Heat up a nonstick pan to medium heat. Add the olive oil 8. Add in and sauté the garlic and ginger for 15 seconds 9. Add the broccolini and sauté for about 1min. Then, add the mushrooms and sauté for another minute 10. Add in the green onions, noodles, sauce, and bean sprouts. Noodle Breathing: First Form: Noodle Face 🍜😂 Recipe: -Udon Noodles -Dashi: -1500ml Water -30g Kombu -20g Bonito Flakes -4-5 Mushrooms -Soup: -1 tbsp Mirin -2 tbsp Soy Sauce -1 tsp Salt -Toppings: -Japanese Yam -Egg -Green Onions -Toasted Seeweed -Wasabi Instructions: Put kombu seaweed and mushrooms in water and bring to a boil. When the water boils, remove the kombu and turn off the heat. Now add Bonito flakes and simmer for 2 minutes. Then filter everything through a sieve. Finely grate the Japanese yam root to create a sticky mass. Cut the spring onions into small pieces, cut the nori leaves into thin strips, prepare a fried egg (the Japanese would have used raw egg yolk, we don't do that because of the risk of salmonella!). Prepare the udon noodles according to package directions. Serving: Add the soy sauce and mirin to the bowl. The udon noodles on top, followed by the dashi broth. Followed by the finely grated yam root. Spring onions, nori and some wasabi on the sides. Umai!

Have all your vegetables chopped, your prawns ready and your noodles blanched to the packet instructions and chilled under cold water. 2. Mix all the sauces with the crushed garlic so it's ready to go. 3. In a wok or large frying pan over high heat, start by stir frying your veggies for 3-4 minutes or until they develop some colour and are tender. 4. Next, add your raw prawns and spring onions and stir fry for 2 minutes. Then, add the Hakubaku Organic Udon noodles. 5. Add the sauce to the pan, pour it around the outside of the edge and stir fry for 3-4 minutes or until everything is the same colour. 6. Serve in a bow and enjoy!

Ingredienti per due persone: • 1 carota • 1 zucchina • 1/2 cipolla bianca • olio di semi • 2 uova • salsa di soia • 1 confezione di Udon • verza ( opzionale) • 8/10 gamberi Procedimento: Preparate le verdure tagliandole a julienne o fettine, tagliate la cipolla a listarelle e pulite i gamberi eliminando il carapace e le zampe. In padella, meglio se wok, fate scaldare un giro di olio e nel frattempo sbattete le uova con un filo di salsa di soia. Quando l’olio è caldo, aggiungete le uova sbattute e strapazzatele. Toglietele dalla padella e aggiungete un altro filo di olio. A questo punto inserire la cipolla e i gamberi, poco dopo le verdure in ultimi gli Udon. Aggiungete salsa di soia, sale, e acqua calda. Fate in modo che gli Udon siano coperti dall’acqua e dalle verdure. Dopo 1/2 minuti, provate a districare gli Udon e separateli. Nel frattempo i liquidi saranno evaporati e potete saltarli leggermente. Procedete a servire, Buon appetito!

This vegan curry udon is SO delicious with thick chewy noodles and flavorful curry sauce. The mushrooms and caramelized onions add so much umami richness with each slurp. Full recipe instructions: 🤍 Blog: 🤍 Instagram: 🤍 Facebook: 🤍 Pinterest: 🤍 - Ingredients ½ oz kombu 8 pieces dried Shiitake mushrooms 1 large onion thinly sliced 2 large king oyster mushrooms julienned 2 tablespoons curry powder separated (see instructions) 2 servings of udon noodles used frozen (250g each) 2 tablespoons mirin 2 tablespoons soy sauce ½ teaspoon mushrooms seasoning ½ teaspoon sugar optional water oil for cooking cornstarch chopped scallions Cooking notes: - This kombu dashi recipe can be made ahead of time. Reserve mushrooms and kombu for other dishes. - If using curry cubes, skip the seasoning and cornstarch slurry. I highly recommend that you chop the curry cube into smaller pieces so it melts easily in the kombu dashi.
