Growing, up my dad made salmon on the grill and 90% of the time, the skin was burnt to a crisp. I began thinking the skin was meant to be thrown away, its only use as a barrier to protect the delicate flesh. But every once in a while he would get it right and combined with the fatty belly meat, it became one of my favorite bites of seafood. When cooked in a pan there’s a couple things I think about to get the perfect salmon skin. Avoid seasoning the skin with anything other than salt, things like garlic powder burn and stick. Press down for better contact during the first 15 seconds of cooking, and use medium or medium high heat. Also, there should be no scraping, the fish will release when it’s ready to flip. Finally, if you happen to have a dry aging fridge in your kitchen and 14 days to spare, dry aging it will give you great results too 😅. 28 Day Salt Dry Age 🧂 Dry aging is very different than “dry brining” and “curing”. With dry aging, protein is exposed to just air (no salt), and chemical changes improve tenderness as well as flavor. In this experiment I completely covered a prime grade strip roast in kosher salt. My assumption (concern) was that any and all moisture would escape, leaving us with desiccated and dry beef. However, the results were very different. The beef appeared to be dry aged perfectly! While it was slightly less juicy than a fresh steak (dry aged steaks often are), the flavor was perfect and there was no need for added salt. While I don’t think it necessarily tasted “better” than a traditionally dry aged steak, it was an interesting lesson in understanding how salt affects beef over extended periods of time - something I’m sure will be useful in future experiments. ————— SUBSCRIBE and RING THE BELL to get notified when I post a video! When it comes to dry aging, the possibilities are endless. Whether it’s beef, pork, fish or really any other protein, the process can lead to delicious results. Adding ingredients to the protein before putting them in the dry ager is something I’ve experimented with as well. The biggest problem is that dry aging takes time. A LOT of time. Unlike regular recipe testing, we have to wait at least 30 days to see if the experiment was worth it. This makes it challenging but also really exciting when it’s time to finally taste them. I had no idea if soaking these roasts for 24 hours would be delicious or even edible for that matter. I recently asked myself, what makes Picanha so good? I realized it’s one of the few cuts that shines in all 3 areas that make a steak great: it’s beefy, tender, and also fatty. Compare this to almost every other cut that lacks at least one: Filet mignon: 👍 tender 👎 not beefy 👎 less marbled Strip loin: 👍 tender 👎 less beefy 👍 well-marbled Brisket: 👎 not tender 👍 well-marbled (especially in point) 👍 very beefy Up against any cut, the Picanha debatably comes out on top. IMO even against the ribeye! While slightly less tender, the Picanha is much more beefy (a trade-off I can get behind). Why does all of this matter? Besides being something I recommend everyone try, Picanha is a cut that shines in the format of high graded Wagyu. Excessive marbling can be overwhelming on most cuts, but I find that Picanha’s beefiness is one of the few that stands up to this richness. This dry aged Australian wagyu Picanha was truly incredible. Our loss was reduced significantly by adding tallow, a process I look forward to continue experimenting with. Dry aging causes a variety of changes, and today’s focus was on texture. Beef shank is normally tough, sinewy, and dry. When cooked slowly in a moist environment it becomes tender, but I wanted to see if dry aging could lead to similar results. 100 days is way longer than a typical dry age (30-60 days is normal), so there was a risk of an overly dry or “funky” final product. The beef and broccoli dish surprised me the most, as thin sliced beef shank would normal be inedibly chewy. Even though visible sinew remained, it had the texture of a flank steak cut against the grain (pretty tender!). The smoked version (pulled at 185F internal) was really close to being a success. This isn't something to try at home, we have a commercial dry age room. There are some products available for home use but we can't recommend them specifically and this isn't specifically about how to dry age beef. This is something that can be unsafe if done incorrectly. The difference is simply that dry aged is refrigerated under controlled conditions left open, and wet aged is the same but the beef is vacuum sealed. Any time you buy a vacuum sealed bag of beef, it's wet aged. 6:02 - Beef dry ages the best, the fat in other meats like pork are more likely to turn rancid. Dry aged beef also needs to have some fat to avoid excessive evaporation losses. 11:36 - How long can you wet age beef and how long can you wet age beef? Here is dry aged and wet aged beef side by side in the cooler for 6 weeks! You may find that dry aged steaks cost more, it's because there is yield loss. Bluefin tuna is a staple in the world of sushi. Perfectly balanced and melt in your mouth, a fresh piece of Bluefin is hard to beat. Then, there’s dry aged tuna… which is in a world of its own. The most significant improvement was texture. Bluefin tuna (especially the lean “Akami”) can sometimes be chewy. I was shocked to find that even pieces with many white fibers, disintegrated the moment they touched my mouth. Flavor came next. With dry aged beef, we expect “nutty” or even “blue cheesy” notes. This was different. Instead of a flavor change, it was more of a flavor enhancement. As I mention in the video, it tasted like tuna in its truest form.
